(Okay, so that's not mine, but mine looks just like that!)
ICMezzo’s cranberry relish
1 bag of fresh cranberries (not cooked)
1 orange
1 small apple (optional)
1/2 cup sugar
(adjust to taste)
So, dig out your food processor from the back of your pantry and rinse out cobwebs. (Note, if you don’t have a food processor, you can use a blender, but the relish will get a bit runnier, and will be harder to get everything to chop up w/o turning fully into mush. That said, if it does turn to mush, it is delicious mush and you will love it anyway.)
Throw cranberries, peeled orange, cored apple chunks (you can leave on skin or remove, your preference) into your food processor. Do a rough chop. After it is all chopped up, add sugar to taste. Depending on how sweet your fruit is, whether you use an apple, personal taste, etc., you will need to add 1/3-3/4 cups of sugar. Just add 1/4 cup at a time. The cranberry will perk up, but still be tangy when it’s right. Fridge for 12+ hours, and enjoy!
PS When i make this, if I’m taking it to a gathering, I use 2 bags cranberries, 2 oranges, 1 apple, 1 cup(ish) sugar. Just saying. But fruit depends on your preference. the less you use, the more “cranberry-y” it will be. :)
PPS This recipe is best after sitting a bit and giving the flavors timet to meld, so make a day ahead and fridge it for best results.
